    Super badass Rodrigue Damascus Gyuto

Gorgeous knife! I am sure it's cutting matches its looks. The ring is unusual. I wonder how hard it would be to remove the ring?

I've had enough! Need a proper End Grain board ... help?

I have three board smith boards with feet--one each in maple, cherry, and walnut. Love them! Only drawback is they are fairly heavy so if you get a large size, understand they will weigh a lot. In our house, I get cleaning duty of the boards as they are heavy for my wife. All 3 if our boards...

    Loose Handle

I have a fairly new Fujiwara Nashiji Gyuto (240mm) that I acquired used but was less than two weeks old per the seller. I have used it a handful of times. It was purchased originally from CKTG. The handle is a bit loose. I don't know anything about how to fix such issues. Who should I...

    Three gyutos--what would you pick?

For under $500, (two under $400!) how about Teryasu Fujiwara, Watanabe, and Kato ?

    Custom Knife Block

I have been wrestling with this as well. I like the convenience of having a block right near my cutting boards and they are on the island. Putting a magnetic knife block on a wall is tricky with our space and, even if I can make it work, will mean walking around the island to get to the...

    Zakuri: Identical Twins?

I am certainly no expert, but the waviness on the spine of right hand knife jumped out at me. That degree of waviness would bother me, but then, given the price, it is hard to complain too much..... I was amused by the way you solved the dilemma:A or B with "yes". Been there, done that, more...

    Knife thinning - visual aspect

I am a newbie sharpener too. Just wanted to say thanks for this thread both for the OP who was brave enough to post his beginning work, and for the contributors who have been nothing but helpful--both the OP and to me. :)

In market for a Gyuto, need good edge retention

I have not read the whole thread, so please forgive me if this has been discussed, but what about Watanabe? I have not tried a Gyuto, but his Nakiri is great, sharp, and made from blue 2 that will hold an edge for some time. His prices are reasonable and delivery is swift.

    240 Hiromoto honyaki w#2 gyuto

Surprised no one has jumped on this. Hiromoto is a terrific maker, thin, good steel, and where can you find a Honyaki by a reputable maker so cheap? They will also soon be unavailable due to the maker's retirement....

    Recommendations for steak knives?

Thx for the excellent responses. Both the muteki and Harner look great, but now I worry about scratching porcelain and needing wooden steak plates. Hmmmmmm. "The more I know, the more I know I don't know"....

    Shig anonymous

Yes and the Shig was not the only knife I bought today! Darn Maxim and his email saying he had Katos and Shigs.....evil, I tell you, just evil! :)

    Recommendations for steak knives?

A long time back, my wife and I bought a set of Wustof steak knives. They were fine but quickly became dull and I came to dislike using them. As I learn about Japanese kitchen knives (and am buying too many of them!) and learnto sharpen, I thought that it might make sense to think about...

    Show your newest knife buy

That is one sweet looking nakiri. I keep telling myself that I am only going to get knives for their function and not for their looks, then I see knives by Kramer or Tsourkan or you name the gorgeous Damascus patterns with custom handles and my resolve weakens......

    Shig anonymous

Until today, the only Shig I have is the 150 Kasumi petty. Today, I ordered a 240 Kitaeji Gyuto. You guys are a bad influence......😜

Carter Damascus in International Pro line

Thx for the interesting observations, Dave. Does the difficulty in grinding also translate into excellence in edge retention?

    need help W/SubWoofer Selection

Movies or music? I have a Rel Britannia B1 for a fairly high end two channel setup, an SVS I used to use for movies (it is huge) and a new Velodyne 12". For all round or just movies, I like the Velodyne. You might need to go with their 10" to stay under budget, but great subs in a much smaller...
