    Passivation of Carbon Knives

Please be sure that you have sharpened and cleaned from any residual rust. And after sharpening you must apply hot water as soon as possible. If it is your first time do not use the knife directly. let it stay in dry air for 1 day, apply hot water again and let it stay for a day again. Do it...

    Passivation of Carbon Knives

I think too that pure metal and metal oxides are hydrophobic. But a not good maintained knife will have metal oxide+water like in form of FeOOH etc. These will have affinity to water and the blade will be hydrophilic. It is the same for glass. SiO2 itself will be hydrophobic but the surface...

    Passivation of Carbon Knives

Reading the responses I realize that in some countries there is no lecture in school about iron in concentrated nitric acid. BTW most reaction speeds including the oxidation of iron surface by air will increase by 2 to 3 times per 10K (or 10C). So the reaction speed is about 1000 times at...

    $20000 for a natural anybody!

The most expensive stone I saw was 5,000,000JPY. The most expensive stone I had a try to sharpen was a 200,000JPY a big egg color Nakayama stone. It had a very nice sharpening feeling. So that 20k is much cheaper. If it is worth that money I do not know. You must try it before you buy.

    Passivation of Carbon Knives

As I explained passivation is at surface only. It is not visible to eye. The question here is how can you make it visible. I think I found a easy method. Just use water and see if the surface is hydrophilic or hydrophobic. After sharpening all my knives surface are hydrophilic that is the...

    Passivation of Carbon Knives

I do not know how the education in other countries are but in Japan we have chemistry lecture in middle or high school (I forgot which because it was about half century ago) about reaction of metal with acid. A piece of iron or aluminum is reacted with concentrated or diluted hydrochloric...

Japanese Natural Stones confuse the heck outta me!

About #number. Originally the number indicate how many stones you can carry in a old Japanese container. So the bigger the number the smaller the stone. But now it will indicate a size. #40 and #30 will be almost same size but #40 will have a cut corner. Most #24 will be over double of...

    Great stone great service

Wow a very very good Ohira suita. There are only few which makes such a good Swarf/Mud ratio. And to find such a yellow color stone is near impossible now. The light yellow color makes a big contrast to the swarf so you can see how you are sharpening the steel away. It is part a plasibo...

    Fingerstones

Maxim san Wonderful finish. Though Iizuka san official says that it is by chance that you get "clouds" on his Kasumi knives I think lot is on your craft and the wonderful JNS you have. I see it is not only luck that you have "clouds" on all your Shigefusa Kasumi knives.
