Just ordered this little knife Milan Gravier 250 mm ash gyuto by @milangravier , can't wait to try it out and report back. This will be my first French made kitchen knife.
I haven’t had a chance to really use it. I’ve picked up too many knives recently and I’ve been primarily using one knife to really focus on improving my sharpening technique. I’ll report back when I’ve had a chance to put it through its’ paces.
I just ordered maybe the last Kaeru WH from JNS last night, at least it was out of stock after I processed my order. I have another one in White 2, I'll be able to share my opinion as well once I take delivery.

Throw down some of that mesh shelf liner and the stone won’t go anywhere.
