Reporting Problems with Knives - Good or Bad?

Vendor or not, competitor or not, I believe it's in the ethic of a forum that everyone's entitled to his/her opinions - as long as they are 1. documented/explained 2. polite and respectful of netiquette It will then be each members job to evaluate such opinions based on a variety of sources...

Am I the only home cook to prefer a larger chef's knife??

Awesome thread that shows different opinions from different typical users. For a home cook I'd say that: 1. If you are already experienced with knives lenghts and cutting motions, then go with your heart's desire and buy whatever length you fancy 2. If you're unsure, probably a gyuto in the...

Am I the only home cook to prefer a larger chef's knife??

Interesting thread... if it goes any further with the weight love maybe we'll see a new resurgence for germans :) Or maybe a german knife with less belly will prove to be the ultimate gyuto! Sorry, just kiddin...

A Yoshikane SKD could be another example of a (good) knife with marked differences with your Ginga

    Carter Funayuki - Big Chips

That knife has plenty of belly, even accounting for the repair, you'll end up with a very serviceable knife for many years to come. And if Murray Carter is doing the job it will be perfectly fine. Good luck and let us know how it goes!

    Slicer Recommendations?

Only thing I feel like saying is: if aestetics are not a priority, choose your pieces individually, don't go for the matching set.

    Compulsive Spending - I can't help it

The Nargusta stuff looks cool, especially the pieces with variances in colour i.e. the whiter inclusions for lack of proper terminology... as for the first ones they are a bit weird, almost look like slabs of stones. Bugger, the more I look at them the more they appeal to me though... I like'em!

    First Quality Gyuto Purchase - <Opinions Needed>

And yes, if you can stretch to 250$ I would try a Gesshin Ginga, never used one but always seemed to be an excellent price/performance option and it's sold by someone you can trust. If I were in the States that would prob be my choice.

    First Quality Gyuto Purchase - <Opinions Needed>

Back to the OP question. I have the Sakai Yusuke in stainless but it is a bit extreme, meaning it's a pure "laser" and have some flex due to its thiness. That's something that has to be accounted for when sharpening and I'm not sure it's the right choice for someone that has to learn...
