    Definitely the Kato Westerns when they were easy to get. Also, choosing a KS3124 over the Masamoto Honyaki when they were available at JCK. A big non-regret was buying a Hiromoto Honyaki while that was possible. Love that thing. Haven't seen many on BST.

    Also, you might not want a flush cut at the end - i.e. you might want to create a facet around the base of the handle or at least break the edge. I would use a sharp box plane for that. You could probably do it with careful sanding though.

    Hon-deba recommendation

    I used to use a 150, then I switched to a Heiji 180 and the size makes life much easier. Recommend 180. I've used a 210 and that felt too big, but I'd use a 180 on anything, and when they get too small for that, then a 120 is the way to go (sardines, little mackerel etc).
