    Carter Muteki

Hey. Thanks for the responses fellas. Casaluz, your Funayuki is exactly what I am after(You sure you're not selling?). The Muteki Mucho Bucho linked looks very similar and I would definitely get it, but the handle contours are very different. I could modify it myself, but I would like one ready...

    Fujiwara FKS 270mm Gyuto

For sale is a used Fujiwara FKS 270mm gyuto, in great condition. Light scratches and watermarks from use. Acquired this within a trade a few months ago. Sharpened once by original owner and once by me. A nice softer steel knife that can handle most anything in the kitchen, just a little too long...

    group photo

Are you based in Los Angeles? They do have a storefront in Beverly Hills. They also go restaurant to restaurant to promote and do sharpening demos. Cook's and students get pretty fat discounts. Definitely one of the more popular brands used by pros here in LA. Not bad knives at all. Many...

What's your go to "line" knife?

FWIW, Takeshi at Aframes does have 240 Tesshus available, but handle less and not advertised on site. Getting one with a d- handle will cost $5 less than current advertised price, white or blue. If you want to get custom work from Shiraki, the vendor can make it happen too. Wait time is 3 months.

    Anryu AS 165mm Bunka

Up for sale: Anryu AS 165mm Bunka Short backstory. I ordered this knife from Japan in November and received a different knife. Informed them about the mix-up, but ultimately decided to keep the sent knife as the Bunka went OOS. Transaction weeks behind me, look what knife showed up at our...

    Knife grips

Honestly, I don't think its wrong at all. With pettys, sujis, I find it ideal not just for knuckle clearance, but for precision/detail work(chik fab, silverskin, sashimi, etc). Who said it was wrong?

How do you use the heel of Gyuto Nakiri Santoku etc?

Fu Rin Ka Zan White #2 Sakai Knives

Impossible to say who may be responsible for the forge by looking at a photo and specs. Angled shots don’t quite show a profile much anyway. Doesn’t look anything like my Tesshus. These just came out I think. I guess I’ll have to wait a while for some useful feedback. Thanks.

Fu Rin Ka Zan White #2 Sakai Knives

http://japanesechefsknife.com/FurinkazanSpecials.html#FuRinKaZanSpecials Did anyone here jump on one of these yet? Would really like to know more about them. Cladding re-activeness, distal taper, grind behind edge? Always been a fan of knives from Sakai. Really enjoyed mono-lasers and...

    Richmond/Ohishi Sakon Skd11 240mm Gyuto

Thanks Dave. She's slowly on the up n up, but it's agonizing for me to watch her struggle. Yep, pin bolsters.
