    Any idea of the age of the barrel? Some can be quite old. I doubt wrought iron is used these days.

    oversized 210 gyuto. Tried longer and shorter but its the 215-220mm edge length that works for so many applications. Shorter and I feel I can run out of edge real estate, especially for larger produce. 240+ is just unwieldy in my hands at home. A 215-220 with a flat profile just works.

    Not even tacos? I have had some phenomenal Mexican street food. Lots of salsa, avocado, sour creme, cilantro, lemon juice, raw onions.... and chopped up meat pieces. Heaven with a nice chilli sauce accompaniment.

    Good luck in the US. I used to get mine shipped in bulk from the UK. Cost effective. The Kent and Sussex Tea Company was my fav source.
