    Count me amongst those that doesn't understand the outrage here. Not that I'm interested in buying one. It's for a totally different market. Plus, it's not like they're forcing any one here to buy one. Let the market decide. If it's a worthwhile knife for it's target market, it'll do well...

    Jon, when you're thinning the Takeda's, are you just using the same technique you demonstrate in your thinning video? Or are you doing anything else to deal with the shoulders?

    I heard from Maxim today and he apologized for the slow response. He did indeed just forget to pack them (fingerstones), and has made another shipment. Faster email communication would have been nice...but that's ok...I wasn't in a rush. Problem solved and all is good. :)

    I was thinking of picking up one of the Koppas that Maxim has right now. Does anyone have any experience with these? With they work finishers for gyutos and Nakiri's (Wide Bevel)?

    Thanks! This is great. I've been wanting to thin down my 210 a bit. The "normal" method of thinning has worked...but it's taken off more the kurouchi than I would like. Do you happen to have any pictures of how you taped up the spine?

    Experiences sharpening Zwilling Kramer 52100

    Also own the parer. No issues at all with sharpening, and haven't had any problems deburring. I can't really comment on the edge retention because I don't use it heavily, but it hasn't disappointed me in any way.

    For reference, $308 CAD is currently $234 USD. Korin has that knife listed at $360 USD. Quite the difference.

    Yeah, I've never used the Suisin...just though like it might be worth a look at that price point. From what I understand, it's just a normal mono steel stainless (could be wrong though).
