    You can use silicone scrapers or even silicone spatulas to remove most of the fat. Anything stuck gets scrubbed in soap and water.

    Usually 270mm gyutos. Sharpest one and properly thinned so it doesn't wedge. The added weight usually helps to split them in half without having to force the knife through. Having the patience to go slower also helps.

    Running all of those hotpots would be a nightmare. I've done as much as three and it wasn't fun as a host. Ever sat down with people who never had hotpots and end up doing most of the work? Now imagine doing that for at least 6 tables.

    I use a pruning shears like the felco F2 90% of the time. For bigger stuff like tree branches a folding saw or a bypass pruner. If you need to cut down even bigger stuff like a tree trunk then an electric saw.

    For paella pan that big, use the grill. I use my Weber charcoal grill. I don't even think it's necessary to season paella pans like you would CS pans. You're going to put tomato purees in it and then simmering for a while.

    The handles on the mineral b have some sort of coating on it. It will discolor if you put it an oven. As far as seasoning it, the best I found is to just keep using it. I use soap and green scrubbies all the time on my pans and the seasoning never comes off unless I apply real pressure. No need...

    +1 for the virtuoso. The new version that just came out a few months ago has the digital timer. The old ones has the manual timer on the side but everything else is the same. You might still be able to find the older one for less if you don't need to dial the exact time every grind.

    Switched to induction a long time ago. The only thing I miss is being able to use round bottom woks. Other than that, it's just much faster and safer than anything else out there.

    Bernal has a store a 2nd store in Oakland. Also if you're in SF go to Japan Town. Soko hardware has a lot of Japanese cookwares, utensils, and of course tools. They do have small selection of jknives and stones as well.
