The ref to toothiness and ref to heat treat doesn’t seem to be including the variable that some people will be forging and some will be stock removing. Forged will need normalising and grain refinement prior to the hardening cycle - would be interesting to see if there was a pattern in people’s...

When you eat meat, do you buy it daily?

Currently portioning vaccing and freezing some dry aged ex dairy beef mince. Isn’t always easy to get hold of, so bought 10kg and that’ll keep me happy for a while.

Show us your sticks (finished handle projects)...

Rehandle and saya for a Tanaka Yoshikazu Saya in Hawaiian Silky oak, which was really nice to work and has a lot of 3d figure, handle was desert ironwood which I always struggle to get good pics of as in person it has a deep shine to it.

Home cooks: Do you switch to stainless for final cooking tasks?

Wipe as you go- I’m not giving it the full clean but wipe with something wet then something dry. Takes no time. Most of my carbons have patina though and I’m fine with it. Shig is the only exception as that cladding is reactive af so that gets hot water thorough dry and oil after use

Question about seasoning a carbon steel pan

Start eating bacon regularly and it’ll take care of itself.

    New Grizzly Sander 2X48

You typically want 1hp per inch as a minimum if you want to do any serious grinding- with 3/4 Hp this will we a bit underpowered so light pressure or lower contact area needed to avoid slowing it down. I’m surprised it’s not got a vfd on it. It says the motor is single phase though in which...

Howto remove 2cm from the tip of my Denka?

Looks like you’ve put the sides of the knife on the stone rather than the bevels? What are you looking to achieve? To thin you work the bevels looking to move the shoulder higher. With your approach the thickness behind the edge will stay the same

The Effect Of “Edge Aggression” Between Steels

Would be interesting to see the same steel heat treated three different ways- as what gets attributed to being intrinsic qualities of the alloy might not be. Not just different HRC from tempering temp, but changing the process with anneals, number of quenches, quenchant used, cryo etc

The Effect Of “Edge Aggression” Between Steels

52100 can vary quite a bit depending on the heat treat approach - would be interesting to know how the sample was HTd

Smoker - worth doing a suckling pig?

Planning the Christmas get together, 10 friends, and thinking what food to have. In previous years have done classic roast beef, slow cooked lamb, Game stew, this year the thinking is more buffet style than sit down meal - mostly as I did a Mexican night and tacos are just the best. So what to...

    London gathering

Back in Cardiff now, and relieved to not have to pick my bag up again. Think I’d be more selective on what I bring next time. Cheers to everyone who brought knives, stones and chat. Was awesome seeing a lot of pieces from the newer makers that I’ve only seen pics of. Some really nice stuff...

Best Carbon Steel frying pan brand to make eggs in?

I tried an Alex Pole pan and then quickly bought all the other sizes. Trick to no sticking is preheating the pan enough. They work great, are handmade, pretty reasonable, and work great. Otherwise Minerale B, solid and reliable but don’t have the same charm and with a choice I prefer the Alex...
