    I just sold a Kaeru 210mm on here. I've used them in a commercial kitchen.They are a tough knife.Edge retention is great.They are easy to sharpen as well.I use a 2000 Shapton pro stone on them. Cheers

    Thanks for the reply's, After emailing James @ KNS its clear this batch of Tanaka Ginsans have a slight inward curve. James even took a photo of another knife to show me, More then happy with the knife. Great at work just like the 210mm I have. Cheers Greg

    Hi Does anyone know if the 240 Tanaka Ginsan is supposed to have a noticeable curve along the spine ? My 210mm is relatively straight. Cheers Greg

    Sugimoto #6 or #7?

    Hi. I use a no 7 Sugimoto and think its a good all rounder. I have used mine in a pro kitchen. you get use to the weight and dont think about it after awhile. Sharpening it is a breeze as well. Cheers
