Oh it's a night-and-day difference - if you don't get it hot before adding the grease it will still stick like crazy. Not sure why it matters, but it definitely does in my experience.

It doesn't hurt to ask. I think the grinds may be different, but i have never actually tried the KU myself.

What about Watanabe? I wouldn't call his gyutos 'santokuish', but they have sort of a bullnose tip and no machi. They are widely considered to cut very well and might give you what you are looking for.
