    Sous Vide Sous vide units- what's good and what's not

    I also use a joule. I have never had anything else, so I cannot give any comparisons, but I do think it works great and have zero complaints. Other than the price going up when Breville bought them out, ha, as I'd like a second unit.

    Do you have beater knife/s ?

    An old house line of aeb-l knives do the trick. Sharpen well, but aren't as thin for sending into dangerous territories (like guests hands). Additionally, one or two of the old target knives my wife had. Need to chop wood in the kitchen? Grab one of those. Ha!

    Anryu AS 240 gyuto

    I picked up another B2 240 and it fits this description perfectly. It is significantly lighter than my old B2 240 and much thinner all around. I have a feeling this is the new standard for Anryu possibly!

    Shibata Kotetsu Love?

    I'm assuming that is what he meant. I have the 240, 270 suji, and will be buying a 240 AS at some point. Hands down, some of the best cutters I've used. It makes my 240 HD2 feel like it can wedge. I'm not the biggest laser guy, but when I want one, Shibata is the absolute go to!
