    I have a few Shun knives. I like them ok but I’ve been wanting to get a longer, carbon steel knife for a few years. I do sharpen my own knives using the norton combination set - the 220/1000 and 4000/8000 ones. I guess they aren’t the greatest based on reviews but I’ve had no issues.
