    UK based knife sharpeners?

Thank you. The surgery was ok. The side effects of the medication was the worst part. I couldn't handle the side effects of the pain medication, so insisted they stop with it. I developed a major case of what bodybuilders call Palumboism from the Morphine and it took a few weeks to go down...

    Least favorite cooking/kitchen job

Have you tried using a small pan? When I'm doing a lot of garlic I use a small Turk skillet as a mallet to smash it, a small copper pan works well too.

What are we listening to lately?

Salsa. Gente de Zona Marc Anthony Carlos Vives I can't understand a word they're saying, but it doesn't detract.

    UK based knife sharpeners?

Thank you. I was quite lucky in a way, the tip of his knife snapped off in my thorax (about 2") so while this necessitated an additional surgery to remove it, it meant that he couldn't stab any more from that point. He's been arrested, and is awaiting trial for attempted murder amongst other...

    UK based knife sharpeners?

Thank you for the advice. Have you used them yourself? Would you trust them to maintain the surface on high end damascus blades while sharpening or would you just send them monosteel and straight san-mai?

    UK based knife sharpeners?

Hello, I'd appreciate some guidance on who in the UK sharpens Japanese knives professionally. Usually I sharpen my own blades, but I only currently have one fully functional hand and as such will need to outsource for the foreseeable future. For anyone curious, I was out running with my wife...

your take on natural drugs: weed, shrooms, ayahuasca, cactcii and so on.

For me it's a no to everything. No caffeine, nicotine, alcohol, etc. I don't understand the reasoning behind the categorisation of natural Vs synthetic. I had a week in hospital not long ago and I'm still getting over the drugs. I did an IQ test while they had me on Morphine and I was down 30...

best knife profile for pull cutting

I find that the geometry near the tip is important when doing a lot of pull cutting. I tend to pull cut more often when using a Mizuno gyuto which has very little distal taper. With a lot of distal taper you often end up with a very thin tip with effectively a flat grind; great for detail work...

What is the one knife you would never sell or trade?

Mack, What's the reason for the extra layers? Aesthetics? BTW, 5-layers of lamination would be go-mai (go=5) as opposed to san-mai (san=3).

What is the one knife you would never sell or trade?

    Demeyere Teppanyaki/Plancha Griddle

Thanks, that sounds great. Any complaints after a couple years of use?

UK/London blade shows that have good kitchen knife representation

You'd have better luck visiting KKF members in and around London.

    Demeyere Teppanyaki/Plancha Griddle

I realise I'm reviving an old thread, but would anyone who picked one of these up like to share their experiences? I just noticed that these are still available here in the UK (albeit at more or less full price).

Skillet or Saute to pair with Lyonnaise Skillets?

That's really helpful thank you and thank you, Rick, for the photos. I've never used a saute pan, and don't even recall seeing them in stores until quite recently (this is in Northern England). I didn't really understand the unique benefits of a saute pan and I think you've clarified it...

Skillet or Saute to pair with Lyonnaise Skillets?

Can anyone advise on how much difference the side wall height makes to sautéing? I have sauteed large quantities before in the Dutch Oven, which has the same base construction (as the sauté), but double height sidewalls. I realise that sidewall height affects evaporation, but the saute seems...

Skillet or Saute to pair with Lyonnaise Skillets?

Thank you all for the advice. Yeah, the Pawson pans are the same construction as Atlantis, just different handles and skillet shape. I have a 28cm Pawson Dutch Oven with the same construction as the saute, but with short handles and double height side walls. I can see that bulk being...

Skillet or Saute to pair with Lyonnaise Skillets?

Thank you for the guidance David. I have quite a few skillets, all Lyonnaise shape. Would you pair these with a saute? If I'm understanding you correctly then with a set of skillets already, you'd be inclined to add a saute? Mostly looking for a larger base, but I've never cooked in a...

Skillet or Saute to pair with Lyonnaise Skillets?

I'd appreciate some thoughts on this. I always tend towards Lyonnaise skillets, my current stable is Turk and Demeyere's Pawson. They're great, but you lose a lot of internal space - the 28cm Demeyere has a base diameter of just 22cm (and this is the largest in the range). I'm looking for...
