    Yanick gyuto sporting a natural stone finish. This was sent to me for repair, it had a chip that was a little more than 1mm deep. I removed the chip, thinned, and then polished. The last stone I used was a dark grey, with spots of renge, from Maruoyama. More pics and vids on my IG : Link below...

    I completely understand that feeling.. but I also know just how difficult it can be to learn when the knife isn't straight. I figured that I could help get it ready for a proper learning experience.

    Have you checked the blade for straightness? The coarse feeling could be from it being bent.

    I think we can just call this a dirty weld and not necessarily delamination. Not ideal, especially for a 2k knife, but not the worst thing ever.

    A lot of it depends on the skill of the sharpener. An experienced sharpener can easily get a toothy edge from a 3k+ stone.

    I'm not sure, but I think I'm seeing delam on the front and cladding at the edge on the back.. would you mind checking this to confirm?

    1k is totally fine. So is 800 or even 3k. It's really more about personal preference and whether you're in a situation where you can touch up an edge or not.

    Dunno that I'd recommend that deba video.. Korin vids tend to not be great.

    It kinda sounds like you just have some residual burr left. This is a guess, ofc, since I can't check it out in person, but I'd keep going and see if it improves
