Just got back from Tokyo on Friday and was at Kappabashi. I would recommend you to visit Kama-Asa and Kamata as well which has a lot of selections for you to look thru.

Yup it's a santoku, i'm trying to track down whose the craftsmen that made it as Kama Asa was sharing that Yoshikazu Tanaka is one of their craftsmen as well.
