Finally got a proper cutting board. 54 x 36 x 4 cm. Oak & walnut end grain. And got a good deal on it as well! About 110$. Mounted some rubber feets on it, and drenched it in mineral oil over a few days. Finished with Boos Board Cream.

    Daily Sharpening Pics

Early morning sharpening session. Pictured is a Kagekiyo White #2 150mm petty and previously mentioned Aiiwatani koppa. Full progression was Shapton 1k, NP 3k and finished on the Aiiwatani. I've tried to have a zero edge on this, but it failed way to early. So this time I've put a less acute...

    Daily Sharpening Pics

Just got my first jnat (Aiiwatani from JNS), and tried it out yesterday on a Matsubara bunka. Didn't do a great job on removing scratches on the previous stones, so there is still some scratches. I like the satin(?) finish on the core tho..

    Can't remove Mazaki handle

Mine is also from CC. I tried doing as @ethompson said; "give it an aggressive, yet controlled, walloping.". I got it out eventually. And you don’t need any fancy equipment. I used this:

    Initial sharpening (honbadzuke)

Thanks, @Rangen! Lets say it doesn’t pass your finger test. Would you try to polish it a bit on a fine grit, or do a full progress?

Naniwa Professional 3k vs Shapton 5k

Thanks for all the recommendations and insight from all the usuals. Much appreciated, as always! Quick update: bought the 3k from @Garm and ordered an Aiiwatani from Maksim. Aaand a new cutting board + new knife… Can someone please take my cards away from me?

    Initial sharpening (honbadzuke)

What do you usually do with a new knife? Straight to the stones or try it out first? What kind of progression etc?

Naniwa Professional 3k vs Shapton 5k

@Garm kindly offered to loan me his NP 3k and a Aiiwatani Koppa. I tried it out on a B2 this afternoon, and both felt really nice. I still have to try cutting something, but felt great when sharpening. 😄

Naniwa Professional 3k vs Shapton 5k

I’m not sure if I want to dive into naturals. Seems like a slippery slope, and another rabbit hole.. Buuut I’m curious. Any recommendations from JNS for a starter natural or two, that would fit nicely into my progression? And I’m already doing a zero edge. At least on my Mazaki. I think what...

Naniwa Professional 3k vs Shapton 5k

I'm considering replacing my Shapton 5k with a Naniwa Pro 3k. I don't like neither sharpening on the 5k and the results I get from it. My knives is missing some bite when cutting tomatoes, chilis, bell peppers etc. My current knife collection is mostly carbon (white 1 and blue 2). Stone...

    Hall of Fame threads

One of the best things with discovering new forums is reading old threads. We need a KKF Hall of Fame. What is the first thread that comes to mind that you would recommend to a newcomer? Informative, funniest, fails etc.

    Kasumi project

Do you mean the scratches on the cladding (a) or the bevel (b)? I have tried for a lot longer than 10-15 mins..

    Kasumi project

Thank you for the excellent tutorial from who I assume is @Matus. I forgot to mention that I have broken about half the stone into smaller pieces, but haven't done the whole glueing thing etc. I'll get some glue and sandpaper tomorrow. Do you have any recommendations to a grit progression? A...

    Kasumi project

I just got home from a trip to Stockholm, and bought a fingerstone at Cleancut. Since I already had scratched up the original finish on the blade road I tried to get a kasumi finish on my Matsubara. I think the result looks decent near the tip. A nice contrast and I like the colour. But I...

    mazaki knives

210mm. Bought it at cleancut in Stockholm. I have read much about different profiles, versions etc. Does this look like a decent one? I like it so far. :)

Help me decide on a gyuto please

Haha, I see. Well, both of my current knifes is on the thinner side. So maybe the Mizaki is the better option to have some variety. Or I could get the Kurosaki AS and Mizaki nakiri. :upsidedownspin:

Help me decide on a gyuto please

And in this case? I am considering some of the same knives as OP, and I currently only have polyboards. I already have a Makoto SG2, and now I'm torn between Kurosaki AS and Mizaki. What would you pick?
