Sharpening a Kabar US Navy/Marine Utility Knife, Mark 2.

Is that a 20 degree edge per side, or in total ?(10 per side)

Does anyone check their knives with Bess scores?

I don't use the magnet. I try to keep a 90 degree agle as steady as possible. I want a straight push down. An other way to describe it, use the direction gravity naturally goes. When you use the magnet, like in video 1, you kind of make a circular motion into the test medium. The more you...

Does anyone check their knives with Bess scores?

It's a fun toy for me. I don't use it for confirmation (you aready know when a knife is sharp) and I certainly don't use it with every knife. My level of sharpening is that I don't always end up with the same consistent perfect results, so when I think I did a really good job, I'm curious how...

Does anyone check their knives with Bess scores?

I use the PT50B I use the test medium (wire in a round box), not the clips. I assume you are not allowed to 'cut' the wire. The bess tester is ment to measure the amount of force needed to cut the medium, measured in grams. So no wiggling or slicing, just a straight push down. I measure at 3...

    Tips for a newb

Learning means making miles. A lot. Don't get impatient yet, you just started. You should be able to get a decent edge on a cheap stainless steel. Like those knives that have been neglected for years by friends. I'm not talking hair splitting or smooth shaving, but cutting newspaper smoothly is...

Alternatives to Chosera 400 and 800?

Pick whatever you really want. The stones will last forever. Or, if you don't mind, buy the chosera later on and have a few overlapping stones. If stone try-out and buying is part of the hobby, there is nothing wrong with have more the the strict practical amount of stones.

Hobbyist fails at converting home user

Did shy actually try a proper chefs knife for that? Multiple times, for a longer period? And then came to the conclusion that a paring knife is her favorite? Or is it just a habit? Using something new once feels always worse..

    F. Dick Butcher Sharpening Steel 25cm fine cut.

I have the blue/polish and grey(white)/micro. I only use them for my wifes cheap stainless beaters. Those knives are dull within a few meals and with the micro I can keep them usable for a little longer, without really damaging or destroying the edge like a coarse rod does. I don't have the...

    F. Dick Butcher Sharpening Steel 25cm fine cut.

But still, what makes those blue(polished) or white/silver (micro) handled dickorons a chefs or a butchers hone? Whats the difference between chefs or butchers

Hobbyist fails at converting home user

Sounds familiar.. - Their knives are sharp, don't need any sharpening - A rod sharpens as good as a stone, but faster - (when finally giving them a sharpened knife), its too dangerous to have a knive this sharp.. - Their Wusthof/Zwilling is the best there is out there and hasnt needed any...

How do I know if the stone is wet enough?

I don't know.. Wetting only a part of the stone might be more harmfull then wetting the whole stone. I think its about having equal conditions all over the stone. Thats why you also want to dry slowly: you wan the inside to dry with the outside at the same speed as much as possible (which is...

How do I know if the stone is wet enough?

Beware that some synthethic stones (mostly S&G) hardly build a true slurry as in 'mud or paste from the stone powder mixed with water) My chosera 600 for example. You only get a metal swarf paste. Thats not wat you are really looking for. Why do you want to sharpen your edge in a slurry anyway?

How do I know if the stone is wet enough?

Don't make this such a mathematical problem. The general guideline is: the stone must be wet. Just put some water on the stone, the way you like to do it. Do it with a cup, by hand, put the stone under a running water tap, or submerse it in a bin. You can use tap water, mineral water or holy...

Three stone solution (well, maybe four...)

Super stones are for good for shiny polishing, from 2000 and up. Below 2000 superstones...I don't know what they are good for..

    Advertising your sharpening service

The thing with random people who just preper dinner is, they always think their knife is sharp, so they don't need their knives to be sharpened. And when you show them what a really sharp knife is, they are like 'well, I can cut food with mine aswell'. I almost have to beg for friends/family to...

    Pink Double-Time Flattening Stone?

They work for me, atleast the 220 kinda gritt. Slower then a diamond plate, but still good enough. The 60 gritts just scratches, and doesnt do a lot more. Some of those things are 20,-, instead of 100+ for an atoma 140. Thats their role. We seem to forget al the addicted, obsesive knifenuts...

    Sharpening, sitting or standing

The joke is as odd as just claiming a living room 'is simply off limit for sharpening' ;) I was just curious in why. You should either just like to share with us/me what the reason is, or keep it for yourself. I'm not interessted in a mudfight about something this little.

    Sharpening, sitting or standing

You are right. A living room is not for hobbies. I send my wife to the cellar when she wants to buy shoes. Jokes aside, I don't see the logic in 'no way in hell'. If you'd stop with 'I want a sink nearby and I want to stand', I could have understand. What's so totally ridicilous with sharpening...
