Can I Get by with one 800 Grit Stone?

Great thank you. Based on this thread I'm leaning towards getting either this: https://www.**************.com/nach200grshs.html or this: https://www.amazon.com/Chosera-000-Grit-Stone-base/dp/B000EBFWY4 Sounds like either stone would be a good complement to the Chosera 800, right?

Looking for Selling Recommendations for Shigefusa and Carters

Thanks that's really helpful. I'm surprised there is such a detailed price history on these knives. It's helpful because with other things I'm selling I can look at similar listings but it's hard to find comparable listings, at least it's difficult for someone who doesn't know anything about...

Looking for Selling Recommendations for Shigefusa and Carters

Sorry I'm having trouble interpreting that graph. How should I read it for a 180mm kitaeji nakiri?

I suppose haha. This is the best way I have to learn what a reasonable price is.

Looking for Selling Recommendations for Shigefusa and Carters

Hi! I have a few knives I intend to sell, primarily because they are above my skill/level of expertise. I bought these knives used several years ago and am hoping to get advice on what would be fair prices to ask for them. I've never used them and I don't think I ever will, so it's time to...

Can I Get by with one 800 Grit Stone?

Thanks that makes sense, I've been considering a diamond set of stones for the woodworking. Good to know you'd lean in that direction as well.

Can I Get by with one 800 Grit Stone?

Awesome thank you I will probably do just that. Is there an easy way to think about what the difference would be between either a naniwa pro 2k, 3k, or the Shapton pro 4k in terms of finishing of the sharpening process after the 800 grit naniwa I already have?

Can I Get by with one 800 Grit Stone?

Thanks for the recommendation. Just to clarify, what's the grit you'd recommend if I was going to get one other stone to complement the 800 grit naniwa?

Can I Get by with one 800 Grit Stone?

Hi! Compared to a lot of people here I have a very simple collection of knives. We mainly use a few carbon steel Masamoto gyutos, stainless steel A G Russels, and a western stainless steel Wusthof chef's knife. I also have a few woodworking chisels. These are what I need to be sharpening. I...

Seasoning flat-bottomed wok on electric range?

Just to clarify, I would treat a carbon steel wok the same way I'd treat a carbon steel fry pan

Seasoning flat-bottomed wok on electric range?

It probably comes with a factory coating of wax or something similar to prevent rust so definitely scrub that off in hot soapy water before you season. There's tons of different ways to season carbon steel, they are all probably fine. Some people recommend cooking potato skins (e.g. ). We've...

What was your first Japanese knife

A set of 4 Masamoto gyutos have also been my first and only actively-used Japanese knives. I love them and have felt they are a very different experience from the German knives I was using before (and still do use often, actually).

What's your all time favourite nakiri?

I grew up using western-style chef's knives (with a few exceptions, I have a few gyutos I really love). I have a nice nakiri but have never felt comfortable to use it - what do people like about nakiris?

    Simple Salt Cellar for Woodworkers

Sounds like you've got all the essentials really haha. Most of our projects are household projects and not really fine woodworking so we've been doing ok using our (small) basement with a skillsaw, sliding miter, jigsaw, and odds/ends (clamps, some crappy hand planes, hand saws, etc.). A...

Do you have a recommended cabinet line/manufacturer? Or would you just opt for a local cabinet maker?
