    another dumb question for beginner whetstone

    The NP400 is at least 87 times better than the Shapton 320. NP400 feels nice, leaves a nice edge, can be her last stone after some practice. The 320 doesn’t feel nice, doesn’t have a nice edge, isn’t aggressive enough for re making bevels.

    I recently discovered an issue with the woodsom holders. If you have to move them, you basically have to rip out the plug that covers the screws to pull it out, which damages the plugs.

    Forget the knife (unless you make one with Harbeer) spend all your money at this place. Crossaints are like €1.50 and are absolutely amazing. Best I had in Paris by a huge margin.

    The Pairing Knife...?

    I just started using a pairing knife in hand for cutting my daily banana. I was using a butter knife. And i like them for cutting cauliflower over a large knife, big Im probably cutting the cauliflower inefficiently anyway. The pairing knife gets in the nooks and crannies better.

    If you wait to have all the tools you need, you will never make a knife. I’ve been making knives for 4 or 5 years and need 10-15 more pieces of equipment. Get some metal and an angle grinder and start cutting out blanks. You have all the tools you need to do everything before heat treating.

    Sorry it’s not the best video. I basically just wash with soap and water, dry really well, then put over my stove burner for a bit to make sure all the water is evaporated, then coat the whole blade and tang with coconut oil.

    I haven’t gone to that extreme seasoning it. I clean it about once a month. And then put it on medium heat to make sure it is completely dry, then warm up some oil and rub it all around the wok. Even the outside. That is basically how I protect my carbon knives. Except I rotisserie them over...

    Which stones for K390?

    When I purchased in Dec 21 it was the Phoenix stones at about $100, not the dragon stones. The dragon stones were significantly more then too. The economical Phoenix options aren't available on the website now. But I have heard the CHSW stones are good too.
