The dirty wrought question made me think about this drop.

    Dirty Wrought

OK is it possible they are referring to the process? I could be wrong but sometimes I believe they refer to a dirty wrought as iron having issues with adhering to the core during the forging and they do not always know how good or bad the forge weld was until they start grinding.

What are you considering dirty wrought? Reused like telegraph wire etc? If so I have not noticed anything.

I’m torn - Munetoshi KU or Mazaki KU 240 gyuto?

I gave my brother in law my yoshi 240 W2 skd with Nashiji finish, I kept getting micro chips on it. My bunka has not chipped. I replaced the 240 with a maz 240 as. Loving it.

Convex or S Grind Santoku makers

Should I be looking at any particular site for a Santoku from Wakui? I have used Cleancut to buy one of his Gyuto's but have not seen a santoku. I still need to make the rounds on some vendors, as I forget which sites favor him.

Convex or S Grind Santoku makers

Looking to add a stainless or semi-stainless Santoku with a convex or S-grind blade, with Wa Oct handle, but having trouble finding options. Can anyone suggest makers or vendors that do the convex or S grind. I swear I saw someone talking about a S grind Santoku recently but searching for s...

School me on wrought iron/go-mai cladding

They only thing I can think of is to make sure the maker has experience with the wrought and and core being used, if the process is not right then you can have an issue with delamination. Most will see this during the finishing stage of the process but it can happen after the fact. So also ask...

Notable makers primarily using stainless cladding w/carbon core - why?

I am currently at 70% carbon and 30% SS or stainless. And never had rust issues either but I don't let them sit about after using. I clean/wipe in a timely manner. Love my carbon and the petinas. I am actually looking to find some alternatives in blue to try perferrable As. Problem is I...
