Highlander tells you, "there can be only one!" Which do you choose? 🤔

Tojiro DP 21cm gyuto or MAC Mighty MTH-80 would be the best affordable “compromise” choices then, and both are great stepping stones into Japanese knives. MAC has a more pronounced belly curve and is better for rocking, while the Tojiro is flatter and better for push pull. If you are...

Need A New Microplane. Any Favorites?

Below is a video explaining the best way to zest citrus, IMHO (goto 1:00 mark). This is the same technique that I was taught at Culinary school, and it is so much more efficient and effective than scraping the fruit across with the zester pointed down. Instead, move the Microplane across the...

    High-End Carbon Steel Pan Recommendations?

I used to own the Made In Blue Carbon Steel Wok, and I occasionally use their Blue Carbon Skillet at work as well. The surface of the wok just could not maintain seasoning - it was impossible to build up over time, and even when I had a thin layer of seasoning everything stuck to its surface...

Using Amazon Gift Card for new gyuto

Yeah should have used better terminology. I want him to avoid Shun, Miyabi, Dalstrong, etc…and find a knife from a smaller artisanal shop that is a better value. It’s hard to do with the options on Amazon, especially because I’m unfamiliar with Yoshihiro.

Using Amazon Gift Card for new gyuto

A classmate asked for some advice on buying a new gyuto, but the catch is he wants to use a $400 Amazon gift card. Are there high end Japanese knives worth buying on Amazon, or do you think he should try exchanging the gift card for cash on Reddit?

Food and Related Myths or Highly Questionable Beliefs

-Use a honing rod "re-aligns" a bend knife edge instead of sharpening it. I believe the science of sharp thoroughly debunked this one, but the myth is still ubiquitous. -cooking meat on the bone adds flavor to the meat. Serious Eats debunked this one awhile ago.

Food and Related Myths or Highly Questionable Beliefs

Yeah I'm calling BS on this one until I see some science to back it up (I didn't see any studies after a quick Google search). I believe you are referring to the process of creating a forcemeat "protein mesh" which has nothing to do with aligning muscle fibers parallel to each other. The...

Small Gap in new Nigara Hamono

Kevin from Northside Cutlery (@kman94) did a great job with the new spalted oak handle! The gap is gone and the size is perfect for my hand. Coincidentally the wood matches my cheap Ali Express saya very nicely :) Looks gorgeous and feels great, so I couldn't be happier!

    Pepper Mill Suggestions

I like kitchen gadgets that can multitask, so I use my grinder as a baseball bat, trekking pole, and coat rack.

Small Gap in new Nigara Hamono

I discovered a legit knife shop in the Chicago area (Northside Cutlery) that is replacing the handle with custom spalted oak. I’ll post pics when ready.

Silicone sleeve for stainless steel pans?

Both of these look like they should provide a lose fit: Silicone Hot Handle Ayesha Curry Handle (not oven safe) If you want the handle to fit like a glove, the spray is your best bet.

    Withdrawn Burnt Chestnut Wa Handle

Looking to replace the stock handle on a Nigara Hamono 240mm gyuto, which is too large for me to grip comfortably. Looking for something around 135mm that is octagonal, d shaped, or heart shaped. I’m happy to trade the stock wenge black buffalo horn handle if interested.

Small Gap in new Nigara Hamono

Used the knife last night to prep Mayo Tofu, and the handle is wayyy too long, high, and wide for my liking. Looking at the handle specs on Burrfection for the same knife, my measurements match the handle on the 270mm version so now I’m wondering if the wrong size handle was applied: Overall...

Small Gap in new Nigara Hamono

I talked to the vendor and he doesn't consider it an issue - the customer service has been excellent and I got a great deal with the current Euro to USD exchange rate, so I'm not going to push any further. He thinks the tang is glued in, but will reach out to Nigara to confirm. I still don't...
