    Why is this not an equally valid potato test? I know I don't cut peeled and soaked spuds - is this a common industry technique? Even then, I don't think the phrase "true food release properties" can be universally applied...

    Would anyone consider selling their Kramer?

    For me I would pay that much for a more recent Kramer. I haven't used any of his knives circa 1998. I know that I really like the geometry of ~2012- Kramers, don't know anything about earlier. That makes paying $5K for what's essentially unknown in terms of performance tough.

    Crunchy, I believe so. It's a great handle and it balances the knife more towards the palm than shigefusa's are with the typically Ho wood handles. I think this makes the knife feel more nimble. Bump and price drop to $425 This includes shipping and insurance in CONUS.
