    Haven't had the chance to use japanese or any other natural stones, just wanted to see if there's a significant difference vs synthetics... i cook professionally and anything thay can make my edges last longer or make them cut better would be something i'd purchase, but if anyone can loan me...

    Knives bought internationally, stuck at customs...

    i have knife ordered from australia, and it shipped last june 10th and the tracking info says it got to LA last june 15th and is now in customs is that normal? On monday, it's going to be 6 days that it has been stuck at customs…. And as most of you guys would feel if you were in my shoes...

    I typically go up to 5k only... I found out that if my edge don't cut paper smoothly when i finish on my 500 grit (burs removed/reduced) then there's no point in moving up... So i kind of test for sharpness at the beginning... And just carefully polish that edge carefully with a 1000grit and...
