    Ajikiri, do I need one?

    I have a Takeda and Watanabe 135mm Ajikiri, both a very different as one is double bevel and the other is single. Both are rather light on the wallet.

    DMT diamond stone too aggressive for sharpening?

    Comes down to "How Sharp is Sharp" :p My wife will not let me sharpen the house knives past 3k as she want more feedback on the cut and feels this level is suited for her. Drives me nuts but I use my own knives in the kitchen, when I can.

    Been out of the game a few years but I still use my Jnats for my razors. Soft stones are more forgiving on a slip in technique where a hard stone will remove a portion of edge requiring a start over at times. This also translates over to synthetic stones as well. I'm sure I'll be corrected...
