    Konosuke 300mm Sujihiki

    I have decided that I would like to go the route of getting a 300mm Konosuke Sujihiki. But everywhere I look there is only the 300mm in HD which is a semi stainless. Do they make it in a carbon steel? Or is it recommended to get the HD and be happy as a clam.
