Looks like it's san mai, where the steel core goes up to the spine
Wide bevel sharpened but many low spots left, thinned close to edge. Choil is ground thinner than rest of blade. Cuts well, good release and thinness -- the kasumi haze on the irom adds drag so I want to lightly polish it
Blade face is forged evenly and consistently. Symmetrical grind. Straightened. Interesting handle ferrule for waterproofing at the tang junction.
Steel is kinda stale feeling -- maybe blue 2 but I don't know because I've had white 1 that felt similar (otake teuchi). Not as crisp or aggressive as I like, but plenty hard enough, definitely harder than deba steel and a moderate averagish hardness for japanese clad knives. Maybe I need to deburr more carefully? Even then, with that I'd say the edge I get from my normal deburr process is slightly stale feeling. (Edit: I palm stropped it and it got crispy as I had wanted). Straightforward to sharpen and deburr the big burrs. On the glassier side but not super duper wear resistant. On the slightly wear resistant side.
