Hello again friends!
Got a couple goodies here!
I am at the point where I truly love all of my knives, so it is very difficult to choose which ones to sell but I have to make room for new ones!
Both of these were purchased in the past year, the HVB I bought from Mert himself, the MCX bought here on KKF but it was brand new. So both have only been used by me…
HVB HONYAKI S GRIND
1095
250x58, 306g
Bocote, African Blackwood handle
$450 shipped conus
This is an absolute beast of a knife… if a SUPER stiff workhorse is what you are looking for, look no further. Steel feels fantastic… very crispy with zero flex. Obviously nice and hefty in hand but feels very comfortable. Heat treatment feels really good on the 1095… not sure what the HRC is but feels very very hard. S-grind gives really nice food release. Only touched up once on an Aizu but other than having some patina is in perfect condition.
Wish I could keep this one!!
Comes with TK padded zip up case.
*FREDRIK SPARE x Modern Cooking MCX HONYAKI
26c3
250x55, 209g
Bog oak handle with spacer and hammered brass cap
$285 shipped conus- SOLD
I got this guy essentially brand new right here on KKF. This is the second release of the first edition from January of 2022 (I believe I bought it in February).
This is such a fun knife. Nice blade forward feel… very KS-like profile that lends itself too whatever cutting style you may have. The tip in very fine so perfect for detail work but is honestly nice and stiff so you don’t feel like you have to be overly gentle with it. Blade overall has almost no flex to it so it feels very solid (and honestly feels heavier than it is). Grind is a comfortable convex… great cutting feel but again, you don’t have to baby it at all.
I have personally put this one through the paces at work… prepping an entire thanksgiving dinner for 300+ people and I had ZERO issues with it. Cut 3 cases of sweet potatoes and I didn’t even have to strop it!
The 26c3 shows some GORGEOUS banding on this one… and takes a beautiful patina as well.
As I said, this one has been used so I lowered the price a bit but overall is in fantastic condition. I have touched it up maybe 2 times with 2k + stones.
If you’re looking for a SICK a$$ knife but don’t have much to spend or maybe you’d like to try out a Honyaki without spending 1k+… this would be absolutely perfect for you.
Again, in a perfect world I would absolutely keep this guy. (Also whoever picks this up, ask @marc4pt0 about how you could put an insane etch on it)
Let me know if anyone has questions or would like to see some more pics
