SOLD - Robin Dalman S-Grind Stainless 210mm Gyuto

Originally purchased from BST back in 2023, this knife is a great example of Robin's early work (dating from around 2018-ish according to Robin) and still really fun to use.
Robin's Swedish stainless (AEB-L?) feels like a really hard HRC, but still crisp on the stones and takes a great edge.
I recently sent these two back to Robin for a spa treatment, and he's done a bang up job. They are now crazy thin behind the edge, with a great new smooth profile.
I've only used it for a few meal preps since getting it back from Robin. Make no mistake, this one is a laser. Please note that the scratch pattern is different from the original hand finished section, and the new belt finished section near the edge and blade road. This was Robin's recommendation as part of the reprofile, as he's moved to belt finishing because the hand sanding slightly reduces performance.
It still makes me smile to see the S-grind on something this thin, and it really does help with the friction while cutting.
Big call out here for the lovely consistent taper down to a whisper thin tip.
The spine / choil are rounded and polished. Included is the saya that came with the knife as part of the BST purchase (including pin).
It's a great fun knife, and astonishingly light and thin considering it's performance characteristics.

SOLD - Dave Martell Custom CPM-154 225mm Gyuto

Originally purchased directly from Dave as a custom back in 2021, so one of his later era works. This was my first custom, and it has been used lovingly ever since. It's been used and thinned over that time, trying to maintain a thin geometry that Dave set with the knife originally.
The statement acrylic and G10 wa handle is fully waterproof, and the CPM-154 is a great all rounder stainless steel that has good wear resistance, while being still reasonably easy to sharpen (although like most stainless takes a bit to deburr).
I've done a sandpaper progression on it to about 800 grit try and get some of the scuff marks smoothed in. There are still some scratches on the blade but these are cosmetic only, like the ones around the choil where I was rounding and polishing a while back to improve the ergonomics.
This is certainly more of a middle weight grind (as the choil shot shows), with a solid tip (compared to say the Dalman's), but it can take a punishing and be totally unphased.
Included is an after market saya that I purchased for it (including pin).
This is a great entry point for anyone new looking for a low maintenance way to try out some of Dave's work.

FOR SALE - Yu Kurosaki Senko SG2/R2 150mm Petty - USD$150

Originally purchased from K&S in Sydney, this is a pretty flashy petty that I bought for the better half originally, but she prefers a 120mm petty length, so I'm downsizing.
I've just got back from a new rehandle, but the knife has seen periodic use and has been sharpened. I did a sandpaper progression up to 1200 grit to blend in the scuff marks on the blade face from the stones where I was playing around with trying really low sharpening angles. It takes a nice edge and edge retention is what you'd expect from SG2/R2 PM steel. It's not tough to sharpen, but like all stainless, can take a little bit more attention to deburr. It is a concave grind, and I've found it's length to be quite useful for light board work and trimming proteins. I've fully rounded and polished the spine / choil (back when I was trying to get my wife to bond with it a bit more). Included is an after market saya that I purchased but never drilled the hole for, but, added bonus, this also includes the rarest of items, the saya pin!
It's a flashy brightly polished knife, which I've tried to capture in the pics below, so maybe a gift for a friends or partners house might also work, in addition to it's functional qualities.

Nice knives… just a note on that ”new spec format” though, tables are a total pain on mobile devices (more and more people use them for all things internet, as time goes by).

Edit: Just looked it up to get up to speed what the current situation, globally mobile use has surpassed 60% in 2022. Split between devices might be different for this site though.
