Hello KKF!
I’m currently searching for a gyuto that I will use as my “line knife” during dinner service. I currently use a Takamura R2 which is a fantastic knife… I want to make a upgrade to something else so the Takamura can be used as a “home knife”, and so my wife has something to use that I won’t worry about.
I prefer full carbon knives but wouldn’t be opposed to stainless clad. I’m looking forward to seeing what’s out there!
