Hi KKF,

One more hard cut today that I'm hoping can find a new loving home . I've had this one for a little while and even contemplated making it a one and done knife, but then I realized I'm not a 1 knife kind of guy...

The profile is very reminiscent of a slightly beefier Tanaka Kyuzo extra height. They also perform very similar (this was the knife I kept when I let my T/K go). Pure cutting performance is second only to my Yanick right now in my current collection. The blade is really comfortable in use and still has a decent flat spot even with it's taller profile. The core steel is 1.2519 and it has wrought cladding. I'm not 100% sure on this, but looks like a layer of nickel in there between the wrought and core steel (wanted to call out just in case there are potential allergies!). Last picture attached is when I did a coffee etch last year at one point and there is that lighter band at the bottom of the cladding. The handle is koa with a copper ferrule.

The performance on that sweet potato looks superb. I have not used any knives from Joe that I didn’t like.
