Hello Gentlemen,
I'm on the lookout for a reliable Workhorse Gyuto knife with a blade length ranging from 240-270mm. It's essential that the knife has a minimum height of 53mm and weighs at least 230g. Preferred from Europe, but I'm open to offers from around the world. If you have any recommendations or offerings, please feel free to share your insights.
Knives that are on my bucket list, preferred in Migaki.

Hi,
I am the happy owner of a Wakui WH from JNS, and it's my “weapon of choice” for handling large quantities of food preparation. The blade is very thick at the heel (approx. 5mm), but the distal taper is impressive, making fine vegetable brunoise, in my opinion, effortless. Following a meat grinder breakdown, I even used it to turn 3 kg of ribs into ground meat. I would consider mine a heavy knife (approx. 320 gr.), 247x57, much more blade than a Toyama, which I also adore but a rather middle weight compared to the Wakui WH. Despite its size/weight, the balance between the simple ho handle and perfectly rounded choil and spine makes handling the knife surprisingly comfortable…IF you like this kind of mass/cutting power. Let me know if you want more infos/photos.
