something inexpensive please. Stainless or carbon. Not previously abused.
 
Dude like 3 posts topics down has two 240 Gyutos the Kaeru is a lot of knife for a little money pretty good deal if you ask me. You didn’t really tell us a budget the two knives he’s offering are 150$ each or 280$ for both check em out

I think you missed the ‘single bevel’ part of the title ;)
 
Pennman: are you looking for a single bevel knife? Ie. a Yanagiba or Deba?
 
Tru single bevel gyutos are really rare, although they came up in a thread recently...
house brand at JCK had a batch made up...

nb the spine thickness JCK is out of your spec range @ ~4mm

you may have better luck with a suisin hayate funayki SB, some the 210mm is reporeted as ~ 2.5mm
...but they are no super cheap either
