One of my own. This Gyuto has a 245mm long differentially hardened W2 steel edge (63/64hrc), a 17mm long X 22mm wide neck, and a 126mm long octagon handle with a faceted butt, made of stabilized maple burl.
The handle dimensions are 26.7mm x 22.4mm tapering to 24.5mm X 20mm. The POB is approximately 37mm from the brass spacer. The handle clearance is approximately 33mm.
The blade is very thin (2.5mm at the neck, 1.5mm at halfway, and .88mm 1cm from the tip) with an almost imperceptible convexity and the edge has been ground to <.003" prior to sharpening. The spine and choil areas have been rounded and polished for comfort. The overall weight is 189 grams.
