Good day all.
This is my first post in the sponsor market, one of many to come I hope.
This Gyuto has a 245mm long W2 steel blade (63/64hrc), a 17mm long X 22mm wide neck, and a 126mm long octagonal handle with a faceted butt, made of stabilized maple burl that's been oil finished and buffed.
The handle dimensions are: 26.7mm x 22.4mm tapering to 24.5mm X 20mm. The POB is approximately 37mm from the brass spacer. The handle clearance is approximately 33mm. The internal fit is an epoxied split dowel
The blade is very thin (2.5mm at the neck, 1.5mm at halfway, and .88mm 1cm from the tip) with an almost imperceptible convexity and the edge has been ground to <.003" prior to sharpening. The spine and choil areas have been rounded and polished for comfort. The overall weight is 189 grams.
As it sits in the photos it's unsharpened, but has since been sharpened to 8000 grit and stopped.
