Looking to upgrade to an Ikeda honyaki from the Shigehiro:

Shigehiro 240mm White 2, from Carbon by Ikeda, sharpened by Kasahara, used once at work and a couple times at home, like it enough that I’m going to finally take the honyaki plunge. 222mm heel to tip, 46mm at the heel, 4.8mm spine above the heel. $300 shipped US

Sakai Jikko Akebono 240mm k-tip gyuto, from James by Shiraki, sharpened by Tosa, used some but gently. I’ve heard these classed as lasers but mine feels pretty hefty, super thin behind the edge though. 238mm heel to tip, 50mm at heel, 3.3mm above the heel. $300 shipped US

Someone pick up the Akebono. A great deal on a crazy good (and underrated) knife. Laser thin at the edge with a more robust spine. Good food release for such a thin knife. Great flattish profile. Creamy sharpening feel and great edge retention. The only knife that I have 2 examples of.
