This was my setup for a while. Frankly I'd still say Wat Pro is a great tweener in that lineup, but if Western is a must...maybe something from Spåre?BBE reporting in

Bidinger is verrrryyyyy thin. At 280g for a cleaver… its paper thin and scary to use but performs like crazy. I think if it didn’t have the s-grind it would be impossible to use from stiction.How does the Dalman compare with the Bidinger? I have the sister to the Bidinger… not sure I ever need another cleaver.

I think JB makes a nice square. An oel square would a killer though…

I think based on one meal the Dalman (340g ish) will much more comfortable for daily use. It wont laser through food like the bidinger but I like a bit more balance anyway. S grind provides some great food release too.

Ladies and gents, @Prod.knives just joined the forum. To start, I really, really wanted this to be part of my ARM arsenal along with an Eddworks and a pair of Shindo. I was going to offer up my original nakiri from him that actually shows a more pronounced distal taper, but I think this piece really demonstrates the forward progression in his work along with the more recent finishing he's doing. If I don't share this one, I would be short changing folks here and the maker. The knife is a 52100 san mai with 1008 carbon steel cladding and stone finished bevels with the following specs:
191mm x 67mm
Spine - 3.4mm out of the handle, 1.8mm about midway, 1.2mm about 1cm from the tip
216g
Zebrawood and brass handle
