I had to downsize after moving into a new apartment so I found some new homes for some of my larger gyutos. Gave a good friend a kochi 240 and some Vietnamese short Suji, I thought I’d hook him up with some stones that at least I could use at his house. Maybe he’ll learn too.

Anyway, after a little consideration I gave him a shapton glass 500 and a JKI Synthetic Natural. Went there for dinner yesterday and sharpened a neglected knife, I was pleasantly surprised, it was a pretty good combination. Used them both as splash and go..

Thought I’d share with the class.
 
On the subject of two stone progressions, my personal favorite for when I want a toothy edge would be King 300 for a great working edge, and then a five passes on King 6000 for a tiny bit of refinement. Either that, or it becomes a 1 stone process, both starting and ending on the King 300, refining using less pressure on each set of passes and stropping on whatever pants I happen to be wearing.

thats a great set up. I stuck around 800-1000 as my starting stone for years but recently gave a Shapton glass 500 a shot. I love how quickly and with very light pressure I can put an awesome edge on and then refine to my liking on other stones or just strop.
