I know some of what can go wrong when using an angle grinder to thin a blade: heating, gouges, accidentally introducing a hollow grind (in the wrong place) instead of flat material removal. It's intense enough to make sparks but very slow compared to a grinding wheel. I don't know whether the wheel will get loaded.

Has anyone tried this? Would it work? I want to buy a partially beveled blank but I know it won't cut easily like a CCK unless I thin it a lot.

Edit: I'm bad at sharpening so I really want thin shoulders.

Havent tried but believe you'll need to go for some quality ceramic flapwheel, like cubitron or such, to get anywhere without overheating.

Oh, is overheating more of a problem than cutting badly due to the curved grinding wheel?
 
Yeah. Like the others have said. You will overheat your blade.

After that, your knives are basically ruined.

If you want a powered option for thinning. Either get something like a shinko wheel. Or a belt grinder.
