I am looking for a someone to send a Glestain knife in the TK series to Matt Sicard so he can get a sense of the handle size, weight and shape. Once he has the data from them he needs, he'll send the knife back to you.
It is for a Sujihiki I am asking him to make. It's (hopefully) the last stage of my quest for the one knife which does every part of Sushi bar duty. I've got plenty of mono taskers, but I'd rather have just one knife for every task at work. It's going to be a 290mm heel to tip, San Mai with wrought iron over Apex Ultra with the blade profile borrowed from a Masamoto KS Sujihiki, and to top it off, a wa style handle that is as close as possible in size, shape, and weight to the Glestain TK series handles. This is why I need to put one in Matt's hands.
As a semi-professional smith, why am I not making this myself? 2 reasons: first is time. A few years ago, I got back into professional kitchens via sushi. Now, it's my primary source of income. Second, is where my particular talents lie. The thing I'm best at right now is making wootz, I've almost got the process perfected. However the thing I'm worst at is grinding. I mean, one would be quite challenged to find a worse grinder hand than mine. I compensate with being excellent with a hammer and with hand finishing skills, but that grinder is my nemesis. This type of knife is going to take some real precision grinding and it is, simply put, beyond my skill level.
