My favorites are the Mikami and the mini EddWorks single bevel
Asking because my custom slot is next up, and I’m finishing some thoughts:

Is the Eddworks an asymmetrical grind, one being convex and the other having a forged hollow and then convexing toward the edge? Or is it a single bevel in the conventional sense?
 
I feel like @mengwong might be able to chime in re non-Euclidean geometry x kitchen knives. He’s raised some geometric / mathematic gold nuggets previously, which inadvertently sent me on a research expedition.
