Hi all.

I just bought a Birch&Bevel 230mm gyuto.

They use a German carbon toolsteel called 1.2419.

Anyone who knows about this steel, and what good/bad to expect from it and the Birch&Bevel itself

Same steel used by Robert Herder in the K-series and the Lignum 3.

Correction: it's not. Herder uses 1.2519

I have a non-B&B Spare from a few years ago in 1.2419. It seems to be ran hard and I really like the steel. Not chippy, crisp on the stones, can sit out dirty while you cook and eat. A little more wear resistant than blue, but maybe a touch below good AS. As a bonus, it looks like his grinds are getting thinner at the edge. Mine needed a little DC love to get it to where it is at now.
 
I liked it a lot when I used it, would get plenty hard without being chippy.
