Hi All,

New to Japanese knives and my daughter and I want to learn how to sharpen them. We took a class at Bernal cutlery to get some basics and are now looking for something we can beat up learning to sharpen, like a 210-240 gyuto or similar with a decent amount of blade length. Between my daughter and I we have a SS clad W2 and an iron clad B1 gyuto, and come summer, an iron clad AS, so I would prefer a knife that will teach us how to sharpen knives with these metals.

Prefer to keep this low cost as I expect we will just keep sharpening it over and over to gain some skills before attacking our more expensive knives. Thanks and happy holidays!

If you're close to Bernal check out their bargain bin knives. Since you can possibly goto the storefront you'll be able to choose blades, rather than a mystery bundle being shipped to you. Might be worth a look.

The bargain bins are in bottom drawers under the counter at the back and side of the shop. They’re not obvious at all and I had to ask.

I’m in the Bay Area too and I keep checking thrift stores, but none seem to have knives; maybe they’re worried about litigation.

My cheapest finds have been garage sales, but old carbon is rare out here.

It's not hard to find in Sacramento. I'm hoarding my 10" Forgecraft chef knives, but if you or OP want other Forgecraft knives or similar basic carbon steel pieces to learn to sharpen on I have plenty that I would let go fairly cheap.
