These are carbon dated blocks of 3400 year old Ancient Bog Oak that just came back from the stabilizers.
There are both standard sized knife handle blocks and extra large blocks that are big enough to yield 2 standard sized blocks.

The wood these blocks were cut from was an old oak tree that was washed away in a flood in Ukraine about 3400 years ago. Over the years the tree was buried in the sediment where it was preserved by the water and sediment. As the tree lay buried it absorbed minerals from the sediment giving the darker coloring and a metallic luster to the wood.

Each of these blocks comes with a paper copy of the carbon dating test report.

There were 30 blocks in this batch.
When I checked the store a minute ago there were still 12 blocks available.
Most are the extra large, double sized blocks.
Some darker ones like this....

Some lighter ones like this...


A few of the kitchen knife makers are using the dark stabilized pieces as ferrule material for wa handles. The dark contrast goes with just about anything.
