just going through and doing more culling... Recently picked this one up off BST. it is a really nice blade and by all accounts by those with more credibility than me; one of the better groups of Catchsides to come out (and I agree). I appreciate the lower bevel nature which makes food release quite good, geometry makes cutting smooth. it may crack some carrots depending on technique but it never feels like it cuts poorly. On the balance of food release vs. "smooth" cutting (aka no cracking etc) it is stronger on food release. I think it carries a good balance between as it never felt like it was wedging. balance point is perfect, just a hint of forward balance but does not feel awkward or unwieldy.

Maybe used once\ and has been since sitting in a box on my shelf. 100% new condition, never sharpened. Looks like they did good job with this one. nothing wonky going on with the grind.

Bought to try out a nakiri and see how I like it. and I think I do like it! I just want something in stainless steel. Moving this one because I need the monies and I got what I want out of it. it does have what looks like pitting spots to me. I purchased it as such and got a great deal so looking to pass that on. It has a lot of life in it and is a great little cutter. would recommend!
