As a young person , I remember a bowl of soup at a restaurant. Green chili potato soup. It was delicious ( from memory)

Anyways I’m getting close to recreating it when I discovered it’s best to lay off the potatoes for a bit. Enter CAULIFLOWER! It’s better anyways. As soup, blended w stick blender: it’s fairly velvety.

It hit me. Green chili cauliflower soup! Hell I might let my hair all the way down and add leeks!

I am not on board w cauliflower RICE. No thanks. Or cauliflower steak. Both are a hard pass. But overall, it’s a versatile veg. I’m a fan.

My poor wife is living thru my experiments. Haha.
 
I had cauliflower rice with dinner this evening. I like it and its an easy side vegetable. Roasted cauliflower in the oven is another common and good preparation I like.
 
I dislike most soups (at least the ones from my region (slavic)) but what you're describing is making me frankly salivate lol. I loved my mum's cooking but the soups... they were so watery and so... unpleasant. But anyway~ cauliflower has a really nice texture when blended, and it absorbs flavors well. Adding leeks is a fantastic move since they bring a depth of flavor. I usually sauté leeks (nice change of pace if you do that with onions more often, like me) in butter before adding them to the soup to enhance their sweetness. As for spices, I recommend adding a bit of cumin, it pairs really well with green chili.
If you want, you can add a splash of cream at the end for an even creamier soup. I often use fresh cilantro as a garnish.

cauliflower rice is excellent imho. it just needs to be crisped up. can be done beforehand in a convection oven. and it can be mixed with regular rice for fried rice dishes.

soups, like above, and purées are great with cauliflower. as is potato mash + cauliflower.
