First up is a catch-and-release, a 210mm Merion Forge K-tip Gyuto/“Bunka”. I got this in two weeks ago. I asked Dominik to make me a “thinner” little bro for the 240 dammy clad yo gyuto he made me a while back, so this is what he came up with. Instead of a “regular damascus” cladding, he was able to make this with stacked wrought iron, which is absolutely gorgeous (peep the video of it before I used it) and will be a joy to polish. Grind is deliciously convex and thin BTE, so she can cuuuuut. The only reason I’m selling it is because I’m not vibin’ with the profile, think I like my 210’s not as tall. Never sharpened, and the edge still has a ton of life left. I only cut a couple hot steaks and onions with it, thus the electric blue patina.
