I’m definitely not a master chef but I like to try variations and new dishes.
So far I have only commercial knives: three Global (boning, vegetables and fillet, probably the best one). A couple of Kai (deba and yanagiba). A couple of Zwilling (chef and chinese cleaver) and a few others. Probably like many other passionate, I own much more than I really need.
The most recent purchase, I’m still waiting for, is a Moritaka Gyuto 21 cm. looking forward to receive it.
