I recently gave a Shibazi cleaver a pretty massive makeover and have found out that I'm a big fan of biggish rectangles.

The logical next step is buying dozens of cleavers like a normal, sane person. I am looking to try the work of a western knifemaker and would love to get some recommendations to narrow down the field, so who owns western made cleavers and who is your favourite maker?

It's been ages since I have been uncertain about a what knives I wanted to try, but I own mainly Japanese gyutos, so cleavers and Western makers are something that I'm very unfamiliar with. I have also read around a quarter of the 2k+ posts in the most recent cleaver thread, but that thread is focused on mainly Chinese and Japanese cleavers, so it's not so useful in my case.

The cleaver will be used for preparing vegetables and boneless meats, so a thinish slicer should fit the bill and what I'm looking for is basically my Shibazi cleaver, but made using higher quality steel. Price and wait time are relatively unimportant (I would rather have something nice than something now) and european based makers are preferred because import taxes and duties are a bitch.

Thanks in advance for the recommendations.

I’m not a cleaver guy but the recent custom gyuto I got from Neil Ayling (Willow Forge Custom Knives) is amazing. There’s a cleaver by him on BST. He’s based in the UK so reach out to him on instagram if interested in a custom.

@BillHanna is the cleaver expert and he’s currently running a Hyde cleaver passaround - check that thread if interested. I have a Hyde custom gyuto coming the next month or so that I’m super excited about.

There’s also a @martinhuber cleaver passaround going on - it’s in the US now and I actually should be receiving it this week. You can see discussion on the passaround forum/thread.

The willow forge one looks great, I’ve been eyeing it for a week lol.

I believe @tostadas just received a @MSicardCutlery cleaver a bit ago. Posted some pictures in another thread not too long ago. Maybe he could offer his opinions

Thanks for the detailed reply! I have actually been eagerly following the two passarounds but I didn't even know I liked cleavers when they were announced, so I didn't get my name down unfortunately.

That willow forge looks like a beaut, but it doesn't quite match what I'm looking for.

Thanks again for all the links and info.

I would definitely recommend you @martinhuber .
Even though his have a neck, like why, his cleavers are really nice and work well. While his Nakiri wasn't bad, wasn't too enthusiastic about it. His cleavers get a (full) recommendation though.
Another guy I would recomment is JJTritz. His forged sides lead to really good food release. He works with good steels, nice taper, beautiful wood imo and his prices are alright for how long he already works as a bladesmith. Just have to talk to him regarding thinness behind the edge. He mostly makes them thicker especially for new customers but he can definitely do them thin.
Also Michael Iracil knives might be an option if he's up to it.

Another vote for Martin Huber's amazing work. I had the chance to try out his cleaver and loved it.
